Salad Wraps

ORIGINAL RECIPE: “Crunchy Vegetable Wraps” from 400 Best Sandwich Recipes by Allison Lewis*

HEALTH: This is basically just a salad you can eat in your hand. Of course, if you are avoiding carbs, you will have to use some sort of protein wrap, or just steer clear of this idea. But for the average person, this will help get some fresh veggies into your lunch box.

EXPERIENCE: Just looking for new sandwich ideas. This turned out as expected, but nothing too special. I would prefer the blue cheese, or even some shredded cheddar or Parmesan.

NOTES: I would go with a lighter tortilla or lavash, like white, tomato, or spinach. I would also leave out the tomatoes in the winter.

  1. Lay out 4 tortillas or lavash.
  2. Top equally with 2 cups seasonal lettuce, 1 1/2 cups shredded, red cabbage, 1 diced tomato, 1 cup shredded carrots, 1/2 cup thin-sliced red onion, and 1 cup radish or alfalfa sprouts. Sprinkle with 4 oz feta or blue cheese. Squeeze a couple tablespoons Italian dressing down the center of each.
  3. Roll up, secure with a toothpick, and pack up for your lunch.

Serve in your lunch box or picnic bag with fruit and yogurt.
